Small amounts of fat are necessary in our diet to provide essential fatty acids and to allow the absorption of fat-soluble vitamins, but most of us eat far more than is good for us. A high-fat diet, particularly one that is rich in saturated fats – found in foods such as fatty cuts of meat and meat products, whole milk dairy products, butter and some types of margarine – increases the levels of cholesterol in the blood, and high cholesterol levels can lead to atherosclerosis and an increased risk of heart disease. High fat diets are also thought to be a cause of hot flashes in menopausal women.
